Survey of dining in university cafeterias
Project Green dining room helps university cafeterias include plant-based foods to their menus.
As we would like to work with the project real numbers students who are interested in such dishes, we have compiled dietary questionnaireWe have reached out to the following for help with filling it out: universities:
- UNIPO – University of Prešov in Prešov
- UNIZA – University of Žilina in Žilina
- UPJŠ – Pavol Jozef Šafárik University in Košice
- PEVŠ – Pan-European University in Bratislava
- UCM – University of St. Cyril and Methodius in Trnava
- UKF – Constantine the Philosopher's University in Nitra
We are very interested in this topic and are eagerly awaiting survey results, which could be known by the end February 2022. Results we will publish on our website and social networks.

The number of vegans is growing rapidly
Globally, it is estimated that in 2020, approximately 311 million people ate vegan, i.e. around 4% of the world's population. Flexitarians, i.e. people who reduce the amount of animal products they consume, was in the same year 3.3 billion, which represents 42% of all people in the world. The main reasons they cite are animal protection and their health. 1
It is mainly a group young people, from the so-called Generation Z (born 1997 – 2012) of which up to 54% does not consume meat and other animal products, versus older people from the Baby Boomers generation (born 1946 – 1964) of which 34% does not consume meat and other animal products. Younger generations are looking for foods that are healthier and more ethical, and they are finding them in a plant-based diet.
The Guardian magazine also points to a recent study that shows that 13.51% of Berlin students eat vegan2.
These data show that, on the one hand, the number of people who eat vegan is growing at a rapid pace, but also that just students, have a large presence among vegans.

Green Canteen – Support for Canteens
As part of the Green Dining Room project, we support the implementation of hearty plant-based meals to university cafeterias. We organize for chefs and cooks workshops healthy, plant-based cooking, we publish cookbooks with recipes, we promote dining room on our website and social networks and of course, we provide general support during participation in the project.
