Legumes contain large amounts of protein, important vitamins and minerals, and therefore they are among the most important foods healthy vegan dietBut we don't have to stop at just beans. Amount of legumes is also bigthat up! Classic Slovak cuisine is somewhat limited to a few legume dishesAnd just vegan diet can we broaden your horizons, as the coordinator of the Green Dining Room, Lucy Trefná, says:
"It wasn't until I switched to a vegan diet that I discovered adzuki and mung beans, chickpeas, black and red lentils, black-eyed beans, bango beans, and butter beans."
says the coordinator of the Green Dining Room, Lucy Trefná
And that's why we filmed 10 video recipes during the summer, where legumes play the main role.
How did we film?
On video recipes We worked in the summer and literally sweated while creating them, because the filming took place during the hottest summer heat, but in a beautiful space. Gastronomy study Bidfood. This means that during cooking and filming we had a “comfortable” 32°C inside. Nevertheless, thanks to the skilled chef Ján Duda, whom you may know from the Ladies’ Club, and the skilled cameraman To Tomáš Orosi, Is the result worth it? Judge for yourself.

Lentil mayonnaise and other "fun"
In total, we filmed together during two hot summer days (how well does it say it now, when it's December and 3°C outside) 10 legume recipesSome were traditional, such as Lentil weld, which however was unconventionally from black lentils. Others were more well-known, such as Vegetable broth with chickpeasAn even bigger surprise was Fried cauliflower with lentil mayonnaise. Don't you know that one?!?! Then definitely watch the video. It's a really simple recipe. The key, however, is to make it properly chilled, pre-cooked, red lentilsIt is definitely healthier An alternative to "classic" (although also vegan) mayonnaise.

For our new coordinator Lucy, it was the first experience of its kind. "She was with chef Ján Duda great funThis can be seen, for example, in the video recipe. Lentil weldwhere it gives funny tips for cooking black lentils. Be sure to check it out!
Legumes in soups
The very first video we made was about soup – Vegetable broth with chickpeas. The pepitas are shaped like like a farmer, but they are from chickpea flour. So they are not only vegan, but also gluten-freeWhen cooking, we must be careful not to overcook them. boiled in sufficient water, as they contain a lot of starch and will not cook well with a small amount of water.
"Cook the pepitas in a large amount of water, like classic pasta. Definitely not like rice in a 1:2 ratio"
A tip from coordinator Lucy for cooking pepitas
We know from our own experience that they are not don't cook like rice, or tarragon (i.e. in a ratio of 1:2). True! And rinse them thoroughly after cooking. You can safely use the water you drain when cooking pepitas in cooking. Chickpea creamIt also contains lots of nutrients, which would be a shame to just pour into the sink. And you will also adhere to Zero Waste.

In the video recipe for this soup we use dried garlicbecause of it the fire will not burn and not even bad breath, as they claim Chef DudaHe adds that we need to use coconut milk with a sufficient amount of coconut – check the list of ingredients on the packaging to see if it contains at least 60% coconut.
"Don't forget that coconut milk is good for cooking, as it has at least 60% coconut"so that you don't end up using coconut water and then being surprised that the soup is still thin."
A note from chef Ján Duda
How many ways are there to prepare falafel?
As we discovered during filming, to prepare Falafel we have more ways.
- dry chickpeas
- ready-made dry mix
- ready-made chilled falafel
To begin with, it is important to use dry chickpeas, which we leave soaked in water overnight. The next day we blend it, add spices, herbs and salt, shape it into balls, or pancakes and fry them. We tried it at home and it is also "kid-friendly" recipe. However, we can also use ready-made dry mix, or also ready-made chilled falafels.
"When preparing falafel from a ready-made mixture, a minor problem arose when the mixture remained thin as water and did not thicken. We quickly found a solution in ready-made refrigerated falafel."
Coordinator Lucy recalls a funny incident while preparing falafel
