Stroganov comes from Russia, from the mid-19th century. The original recipe included beef, cream and mustard. However mushroomswhether soy meat are commonly confused with beef. Some recipes omit the mustard and some add chopped or sliced picklesIn Slovakia, stroganoff is often served with tarragon or Slovak rice (orzo).

This vegan version of stroganoff comes from Mactarines.

Serving size: 360 g = 180 g stroganoff + 180 g side dish

Ingredients for 10 servings

  • 100g Onion
  • 1.5 kg Champignons
  • 1 l Water/vegetable stock
  • 500 ml Vegetable cream
  • 25 g Oregano
  • 50 ml Soy sauce
  • 25 g Cornstarch

Technological process

  1. Fry the chopped onion in a little oil.
  2. Add oregano and sliced mushrooms.
  3. Fry for 3 minutes. Add water or vegetable broth, soy sauce and vegetable cream in which we have mixed the starch.
  4. Stir and cook for 10 minutes over medium heat.
  5. Season the reduced sauce with salt or soy sauce and black pepper.
  6. Serve with rice or pasta.
